Nut butters are the secret to perfectly simple and delicious truffles at home. Seriously. Whether you’re a Trader Joe’s Cookie Butter lover, or any nut butter connoisseur- these bites of chocolate bliss will curb your sweet tooth. They also make great last minute gifts!
Ingredients:
- 1 cup nut butter
- 1/2 cup maple syrup (or similar)
- 1/2 tsp Sea Salt
- 3 tsp vanilla extract
- 2 tsp coconut oil
- vegan chocolate chips
Method:
Just scoop 1 cup Nut Butter into a bowl, add 1/2 cups maple or any sweet syrup you like. 1/2 tsp sea salt which brings out the sweetness. 3 tsp vanilla. Add in 2 tsp coconut oil. Also, add in some vegan chocolate chips to create some cookie faux bites! Mix well, and roll into little balls. Place parchment paper on a large plate and place the cookie dough bites on it and pop the plate in the freezer.
Now, get out your fondue pot (or a shallow boiling pot of water with a glass bowl inside filled with the chocolate) and melt those vegan chips. They don’t need to be in for too long, stir them for a while and they will melt from the leftover heat in the dish. Next, take out your bites and dip them into the melted chocolate (carefully!!) and place them onto the parchment lined plate again.
Once all dipped and onto the parchment, pop back into the freezer until ready to serve, or eat! For extra fanciness, roll them in chopped nuts, coconut or sprinkle with sea salt before popping into freezer. Keeping them in the freezer will help keep them safe from melting. Don’t be surprised to go to the freezer and find a few missing every so often.
