“Healthy” and “comfort food” aren’t typically synonymous but that doens’t mean they can’t be! This Holiday season, or really anytime you’re craving fluffy potatoes, grab a bowl of this creamy, comforting and way delicious, healthy side dish.
What you’ll need:
- 3 Cups Cauliflower
- 1 Clove of garlic
- 2 Tbsp. Water
- 1/2 Tsp. Sea Salt
What to do:
Put all your ingredients together in a food processor and blend, blend, blend until creamy smooth. Word to the wise: Don’t add any more liquid than what’s listed, otherwise you may end up with Cauliflower Soup (which isn’t bad of course) but we’re going for mashed potato texture. So, a little drier is good for bulk and fluff!
